Quick "Feel Better" Soup

Ingredients

  • 1/8 cup olive oil
  • 1 onion, diced
  • 2 garlic cloves, smashed and rough chopped
  • 2-3 large carrots, peeled and sliced
  • 4 celery stalks
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 1 28 oz can organic tomatoes
  • 1 box organic low salt chicken stock/broth
  • 1/2 lb whole wheat rotelli pasta
  • 3/4 lb broccoli florets
  • 1 can cannelini or kidney beans, rinsed and drained
  • 1 bunch of swiss chard, roughly chopped
  • Water as needed
  • 3 Tbsp prepared pesto
  • sea salt and ground pepper to taste

Preparation

Heat large soup pot over high heat. When hot, add olive oil and immediately add onions, celery, and carrots. Saute a few minutes. Add the garlic, oregano, and basil. Cook another couple minutes, until veggies are starting to look shiny and partially cooked. Don't burn garlic. 

Add chicken stock and canned tomatoes. Bring to a boil.

Add pasta and broccoli florets. Cook until pasta is done al dente. Add beans and swiss chard, stirring until chard is wilted and completely incorporated into soup. If the soup needs more broth, you can add more stock or some water and cook a few more minutes. 

Add a few tablespoons of prepared pesto (trader joes has a nice one) and mix in. Season to taste and serve.
