Roasted Eggplant GanashIngredients
PreparationPreheat Oven to 400 degrees. Put eggplant, garlic, and tomatoes on baking sheet. Drizzle with Olive Oil and chopped thyme. Season with salt and pepper and cumin. Roast for about 30 minutes. Puree in food processor with remaining ingredients, season with salt and pepper. Serve on Veggie Chips or Baguette slices garnish with grated Parmesan and chopped Basil or parsley.
